If a customer is away for say 2- 3 weeks, is it ok to disconnect from the server?

If yes, are those 2-3 weeks credited back to the account?

In the billing (My subscription section), you can find FREEZE button in the PACKAGE column.
You may suspend your subscription for the period you need. After you come back from vacaions (or whatever), you will press the same button to activate your subscription again. Don't forget that any subscription available will be active from the next morning (6AM).

Ok, but does freezing extend the time period from the original expiry date?
